The Best Place for Food In Mexico: MUNCHIES Guide to Oaxaca (Part 1)

In the first episode of Munchies Guide to Oaxaca, host Daniel Hernandez dives right into the belly of Oaxacan food by starting his visit at the Mercado 20 de Noviembre, one of the old-school markets in the historic center of Oaxaca City. Here, he samples local fare like tejate, chilacayote, tasajo, andchapulines, Oaxaca's famous toasted grasshoppers. Since everyone needs a recharge, Daniel then visits a classic Oaxaca City cantina called El Chato, and has the house special, a Mexican lager in a salted, lime-crusted glass. Later that night, he dines with chef Alejandro Ruiz, at the temple of contemporary Oaxaca cuisine, Casa Oaxaca.

All the Tacos: Mexico City's Favorite Taco

Meet your new favorite taco: the taco de canasta, or "basket taco." Our host Francisco Gómez travels first to Vicente Xiloxochitla, in Tlaxcala, the birthplace of the taco de canasta. Then he heads to Mexico City, where he shadows a canasta taquero as he peddles his wares all over the city. This steamed taco—literally delivered via bike—is one of Mexico City's most beloved street foods.

OUR HISTORY

Favela’s Mexican Grill delivers a fun Mexican dining adventure at a moderate price. We have become Solano County’s favorite Mexican Restaurant by being a place where every guest will enjoy fast friendly service and delicious food served in a fun, festive atmosphere. Favela's is more than a restaurant. It's an attitude. It's a spirit. It's a way of life. We're committed to making sure our guests are greeted with a smile and that they leave with one. It's what we stand for and is reflected in everything we do.

In 1990, a young Veronica and her father Elisardo Favela found a need for a new style of Mexican restaurant; it would be a casual style with festive surroundings. Along with an attractive environment, the food would be the freshest and best tasting every time. This service would also have to fit a family's budget.

Most importantly, the overall focus would consist in the customer’s appreciation of every savory item. The Favela’s “Familia” believed strongly that the values they established would eventually lead to success. They were right.

By 1993 and demand from out-of-town customers, prompted Veronica to expand the business and open a second location in Vacaville which has been a success since it’s opening. Never straying from the original intention, never losing focus on consistent and affordable Mexican food and excellent service, the restaurant has continued its steady rate of growth. To prove this, by 1998 a third location on the north side of Fairfield was opened. This restaurant was capable to offer many new additions to the menu that only made the restaurant more appealing to the community. After fourteen years, Favela’s is ready to expand into the Sacramento market finding a niche in the West Sacramento area.

Mexican food outside Mexico

Mexican cuisine is offered in a few fine restaurants in Europe and the United States. Sometimes landrace corn from Mexico is imported and ground on the premises.

Mexican food in the United States is based on the food of Native Americans and Hispanos in the Southwestern United States and Northern Mexico. Mexican foods that originate in the United States often come from the Southwestern region, breakfast burritos and red or green chile come from New Mexican cuisine, likewise chili con carne and chimichangas are examples of Tex-Mex. With the growing ethnic Mexican-American population in the United States, more authentic Mexican food is gradually appearing in the United States. Most large American cities host a Mexican diaspora due to proximity and immigration, and Mexican restaurants and food trucks are generally easy to find in the continental states. One reason is that Mexican immigrants use food as a means of combating homesickness, and for their descendants, it is a symbol of ethnicity. Alternatively, with more Americans experiencing Mexican food in Mexico, there is a growing demand for more authentic flavors. Korean tacos are a Korean-Mexican fusion dish popular in a number of urban areas in the United States and Canada. Korean tacos originated in Los Angeles.

Don Churros Gomez is a family-operated churro business that started in Yahualica, Jalisco, Mexico. They first started making churros in 1969 and haven't changed their recipe since! Now they've taken their traditional churro spiral called "roscas" and thick-style churros filled with cajeta to Anaheim, CA in a retro food truck.

Desserts : Baked Goods

Baked dessert items in Mexico are mostly ideas imported from Europe over time. These items came from a variety of different nations before becoming staples of desserts in the region. Baked goods include cookies made with local fruits, churros which originated in the Iberian Peninsula, and macaroons which come from Italy. Churros can be made by mixing flour with boiling water, shaping and frying that mixture then coating it in cinnamon and/or sugar. Churros can be eaten hot or cold and can be molded into any number of different shapes. Macaroons can be made by beating together around 60 eggs, mixing some more eggs with sugar, mixing in flower then baking the whole thing.

Desserts : Chocolate

Chocolate consumption pre-European influence was drunk in a warm syrupy form mixed with honey. This was done in order to create a pleasant drinking experience. During this time chocolate was also treated as medicine. After the arrival of Europeans, Chocolate was brought across the sea to Europe where it would be used in various forms including medicine and confections. In the modern era, chocolate is used as both a topping and a dip, as well as in candies. The traditional form of chocolate consumption lives on in the form of Mexican hot chocolate, the natural evolution of the warm syrup.
