How Fresh Corn Tortillas Are Made
Contemporary Mexican restaurant Suerte in Austin, Texas makes over 2,300 fresh corn tortillas each day. The restaurant starts by turning 60 pounds of corn into 120 pounds of masa in a process called nixtamalization. The masa is then used to make tortillas, tostadas, and tamales.

Our History - Favela’s Mexican Grill
Favela’s Mexican Grill delivers a fun Mexican dining adventure at a moderate price. We have become Solano County’s favorite Mexican Restaurant by being a place where every guest will enjoy fast friendly service and delicious food served in a fun, festive atmosphere. Favela’s is more than a restaurant. It’s an attitude. It’s a spirit. It’s a way of life. We’re committed to making sure our guests are greeted with a smile and that they leave with one. It’s what we stand for and is reflected in everything we do.
In 1990, a young Veronica and her father Elisardo Favela found a need for a new style of Mexican restaurant; it would be a casual style with festive surroundings. Along with an attractive environment, the food would be the freshest and best tasting every time. This service would also have to fit a family’s budget.
Most importantly, the overall focus would consist in the customer’s appreciation of every savory item. The Favela’s “Familia” believed strongly that the values they established would eventually lead to success. They were right.
By 1993 and demand from out-of-town customers, prompted Veronica to expand the business and open a second location in Vacaville which has been a success since it’s opening. Never straying from the original intention, never losing focus on consistent and affordable Mexican food and excellent service, the restaurant has continued its steady rate of growth. To prove this, by 1998 a third location on the north side of Fairfield was opened. This restaurant was capable to offer many new additions to the menu that only made the restaurant more appealing to the community. After fourteen years, Favela’s is ready to expand into the Sacramento market finding a niche in the West Sacramento area.

Horchata: The History of the Delicious Beverage
Orxata de xufa, the delicious milky beverage made from ground almonds, sesame seeds, rice, barley or tigernuts (chufa nuts), better known as Horchata, varies in name and flavor from region to region. The sweet and infectious drink, which is served chilled or over ice, originated in Valencia, Spain, has become a favorite natural summertime refreshment throughout Europe and South America.
In Mexico, Guatemala and the U.S.
Taquerias often have large dispensing fountains, where the rich liquid rotates in the belly of the large containers, waiting to act as the perfect accompaniment to tacos, burritos and other fast food-style Latin food. In Mexico and Guatamala, Horchata is made with rice and cinnamon, and often with vanilla. The United States on the most part has adopted the rice-based or, less frequently used, morro horchata of Mexico, and horchata is sometimes available in grocery stores in powder form or is sold ready-made. Some places in the U.S .even offer Horchata Frappes.
in Honduras, El Salvador, Puerto Rico, Nicaragua, and Venezuela
Southern Honduras and El Salvador use morro seeds, not rice, but includes the traditional tigernuts, as well as peanuts, almonds and cashews. It is strained before it is served. Other parts of Honduras and Nicaragua refer to horcata as semilia de jacaro, and it is made from jicaro seeds ground with rice and spices. Puerto Rico calls the drink horcata de ajonjoli, and uses ground sesame seeds, water, sugar, cinnamon sticks and evaporated milk; sometimes coconut milk, allspice, barley and lime zest is used. Venezuela uses sesame seeds, water and sugar; but, they also make chichi, a similar drink, is comprised of rice flour, sugar, water and an alcohol made from fermented corn flour. In Ecuador, they use an infusion of 18 herbs.
Horchata Word Origin from Catalan
In terms of etymology, the name derives from the Catalan word orxata, from ordiiata, because the drink was made from ordi (barley). There are farce tales regarding the development of the name, including one legend where Spanish Conquistador James I of Aragon visited the village of Alboraria for the first time, and partook of the sweet beverage, and allegedly proclaimed, "Açò és or, xata!" ("That's gold, darling!").
"The gold" is fairly easy to make at home, but does take patience in order to yield delicious results. There are thousands of recipes on the internet, adding and subtracting key ingredients, but there are also traditional recipes that are rumored to be quiet delicious: Find recipes HERE.

Silky smooth, sweet, rich custards are a sensual way to end a nice meal without being too heavy. Dessert custards all share something in common: a glossy, silken texture and lavish flavor. The difference between crème brûlée and flan (two of our favorite kinds of custard) lies in four factors: the ratio of ingredients, the manner in which the custard is thickened, the method of cooking, and any additional components. Those extra components—different toppings and presentation—are easiest to see.
The Balance of Eggs, Sugar, and Dairy
In custards, the proportion of eggs to sugar to dairy is critical, since texture and flavor hang in delicate balance. Eggs lend sturdiness, and the most opulent custard desserts contain only egg yolks. Sugar also affects texture: The more sugar in a custard, the less firm it will tend to be, and the longer it will take to set. And the amount of fat in your dairy, whether cream or milk, will affect the dessert’s level of richness.

The Unique History of Flan, a World Traveled Dessert
With Cinco de Mayo approaching, we were trying find a delicious South of the Border dessert to make for a blog post. This led a topic of great debate in our kitchen. Where the heck does flan come from? They serve it at Mexican restaurants, we’ve all had it in Mexico, and yet the name in no way sounds Mexican. I was sure it was of Spanish descent, Tina, our graphic designer, attested to it being French, and Lucretia, our marketing specialist, swore it was Italian.
So I did some research and it turns out we were all kind of right.
Dessert: Flan
Pronunciation: According to the Mother Ship of all pronunciation websites, Forvo, you’re supposed to say “flayn,” as in it rhymes with “plan.” Glad that’s settled.
Origin of the Name: The name comes from the Old French word, “flaon,” from the Late Latin word, “fladon,” which is derived from the Old High German word “flado,” which means a flat cake or object.
History: Like many desserts, flan’s existence began during the Roman Empire. The Romans were the first to domesticate chickens and they found themselves in the middle of an egg surplus. So they used techniques they stole learned from the Greeks to develop new egg-based recipes. These recipes, as you can imagine, resulted in loads of dishes and desserts, including flan.
Back then, most versions of the dessert were savory rather than sweet and included flavors like eel sprinkled with pepper. But a few early recorded recipes contained the only sweetener of the day: honey. And as the Romans conquered basically all of Europe, their customs, beliefs, and recipes went with them. The sweet variety of flan gripped the newly vanquished lands and when the Empire fell in 476 CE, flan survived.
Of all the peoples introduced to this dessert, the Spanish were particularly taken with it (and were the first to top it with a sweet caramel sauce). Like the Romans before them, the Spaniards brought flan to new lands, when in 1518, the famous conquistador Hernán Cortés landed in the Yucatan Peninsula of Mexico.
The Mexicans took flan to a whole new level. They created coffee, chocolate, and even coconut flavors and the recipes became popular not only in Mexico, but the rest of Latin America.

Our History - Favela’s Mexican Grill
Favela’s Mexican Grill delivers a fun Mexican dining adventure at a moderate price. We have become Solano County’s favorite Mexican Restaurant by being a place where every guest will enjoy fast friendly service and delicious food served in a fun, festive atmosphere. Favela’s is more than a restaurant. It’s an attitude. It’s a spirit. It’s a way of life. We’re committed to making sure our guests are greeted with a smile and that they leave with one. It’s what we stand for and is reflected in everything we do.
In 1990, a young Veronica and her father Elisardo Favela found a need for a new style of Mexican restaurant; it would be a casual style with festive surroundings. Along with an attractive environment, the food would be the freshest and best tasting every time. This service would also have to fit a family’s budget.
Most importantly, the overall focus would consist in the customer’s appreciation of every savory item. The Favela’s “Familia” believed strongly that the values they established would eventually lead to success. They were right.
By 1993 and demand from out-of-town customers, prompted Veronica to expand the business and open a second location in Vacaville which has been a success since it’s opening. Never straying from the original intention, never losing focus on consistent and affordable Mexican food and excellent service, the restaurant has continued its steady rate of growth. To prove this, by 1998 a third location on the north side of Fairfield was opened. This restaurant was capable to offer many new additions to the menu that only made the restaurant more appealing to the community. After fourteen years, Favela’s is ready to expand into the Sacramento market finding a niche in the West Sacramento area.

Silky smooth, sweet, rich custards are a sensual way to end a nice meal without being too heavy. Dessert custards all share something in common: a glossy, silken texture and lavish flavor. The difference between crème brûlée and flan (two of our favorite kinds of custard) lies in four factors: the ratio of ingredients, the manner in which the custard is thickened, the method of cooking, and any additional components. Those extra components—different toppings and presentation—are easiest to see.
The Balance of Eggs, Sugar, and Dairy
In custards, the proportion of eggs to sugar to dairy is critical, since texture and flavor hang in delicate balance. Eggs lend sturdiness, and the most opulent custard desserts contain only egg yolks. Sugar also affects texture: The more sugar in a custard, the less firm it will tend to be, and the longer it will take to set. And the amount of fat in your dairy, whether cream or milk, will affect the dessert’s level of richness.
Which Thickening Agent?
Custard is set in one of three different ways: with eggs, starch, or gelatin. Crème brûlée, pots de crème, and flan are thickened with egg; in contrast, pastry cream and American-style cheesecake often employ cornstarch or flour.
