A GLOSSARY OF MEXICAN FOOD : Barbacoa

Origin of the word “barbecue” but in Mexico it usually refers to fatty, pot-roasted meat slow cooked with onions and cilantro, then served up on warm tortillas, garnished with guacamole and salsa.
