There’s no one “right” way to make an enchilada. In fact, depending on where you are in Mexico, enchiladas look—and taste—very different. In Oaxaca, you might find them topped with mole negro. In Northern Mexico, they’re often filled with beef and smothered in spicy red chili sauce. In Yucatán, you might even encounter a version with hard-boiled eggs and achiote seasoning.
